Stir-fried chicken with ginger and cashews

Easy  & Tasty Chicken Stir-fry

This fast and easy stir-fry is perfect for dinner. It’s balanced with chicken and lots of vegetables. Simply serve with a bowl of steamed rice. Voila!


Makes 4

1 1/2 tablespoons oil

8 spring onions(scallions), cut into pieces

3 garlic cloves, crushed and chopped finely

8cm (3in) piece of ginger finely shredded or cut into fine strips

2 skinless chicken breasts, cut into strips

2 red capsicums (peppers), cut into atrips

150g (5 1/2 oz) snow peas (mangetout)

100g (3 1/2 oz) cashews

2 tablespoons soy sauce

1 1/2 teaspoons sesame oil


1. Heat oil in a wok in medium fire.

2. Add ginger and garlic and stir them around until golden brown.

3. Add spring onions and stir fry for few seconds. Add the chicken and stir around until it has turned all white.

4. Add the red capsicum and keep stirring, then throw in the show peas and cashews. Turn heat high.Stir fry for a minute or two.

5. Once the red capsicum has started to soften a little, add soy sauce and sesame oil.Toss everything together.

6. Tip the stir-fry into serving dish.

7. Serve with steamed rice and add more soy sauce to liking.


I prefer the stir-fry with chicken thigh instead of breast but it’s up to your preference. Half the ingredients if you are cooking for 2 but adjust the soy sauce and sesame oil accordingly to taste. The control of fire is crucial for stir-fry dishes. Always keep fire on low-medium when cooking ginger and garlic. Once the colour starts to turn golden brown, only add other ingredients. Put fire on high whenever cooking vegetables for brightly coloured and crunchy texture. Soy sauce can be added accordingly to liking.
