Garlic & lemon mussels

Easy seafood delight

If you are a seafood fan, then this is the recipe for you! It’s so simple and taste yummy as well.

Makes 4

2 tablespoons olive oil

1kg mussels

6 cloves garlic, finely chopped

1 chilli sliced

1/2 bunch basil leaves, roughly chopped

4 roma tomatoes, diced

1 cup white wine

1 teaspoon salt

freshly grounded black pepper

1 lemon, cut into wedges

1. Heat the oil in a heavy based saucepan until almost smoking.

2. Add the mussels. They should make a popping sound when they hit the oil. Cook for 1 minute.

3. Add the garlic, chilli, basil, tomatoes and white wine. Cover with a lid and cook for further 4 minutes.

4. Discard any mussels that do not open during cooking.

5. Season with salt and pepper. Serve with lemon wedges.

This is a fairly easy and no fuss recipe. Simply serve with pasta or a roll of bread into the sauce!
